Pumpkin Pie Chia Pudding

- 2 tablespoons chia seeds
- 1/2 cup non-dairy milk
- 1/2 teaspoon pumpkin pie spice
- 1/4 cup coconut cream
- 3 tablespoons unsweetened pumpkin puree
- 1 tablespoon sweetener of choice cane sugar, coconut sugar or maple syrup
Instructions
- Add the chia seeds, pumpkin pie spice and non-dairy milk to a small glass, bowl or jar and stir together.
- Then cover and let sit in the refrigerator for 4 or more hours.
- When the chia pudding is set, whisk the coconut cream with your sweetener of choice and pumpkin puree. Layer onto the chia pudding and top with a sprinkle of pumpkin pie spice, Enjoy!
Chai Spiced Chia Pudding

- 2 tablespoons chia seeds
- 1/4 cup non-dairy milk
- 1/4 cup chai tea concentrate
- 1/4 cup coconut cream
- 1 tablespoon sweetener of choice cane sugar, coconut sugar or maple syrup
Instructions
- Add the chia seeds, non-dairy milk and chai tea concentrate to a small glass, bowl or jar and stir together.
- Then cover and let sit in the refrigerator for 4 or more hours.
- When the chia pudding is set, whisk the coconut cream with your sweetener of choice and layer onto the chia pudding, top with a sprinkle of cinnamon Enjoy!
Roasted Apple Chia Pudding

- 2 tablespoons chia seeds
- 1/2 cup non-dairy milk
- 1/2 teaspoon cinnamon
- 1 apple
- 1/4 teaspoon coconut oil
Instructions
- Add the chia seeds, cinnamon and non-dairy milk to a small glass, bowl or jar and stir together.
- Then cover and let sit in the refrigerator for 4 or more hours.
- While the chia pudding is sets, core and slice the apple, spread out in a baking dish and brush with coconut oil, roast in the oven at 350 degrees Fahrenheit for 20-30 minutes or until the apple slices start to brown and bubble.
- Let the apple slices cool, then layer onto the chia pudding, top with a dollop of coconut cream and a sprinkle of cinnamon, Enjoy!
